We spent the holiday weekend in Lake Tahoe. Since we’ve made the 8-hour drive countless times over the years, I know to expect a certain level of lethargy at the end of the day. It’s amazing how tired you get sitting for 8 hours straight. Going out to eat once you finally get home sounds criminal. After a week of dining out, our stomachs (and pocketbooks) want something from home. In the last few years I got in the habit of stocking our kitchen with a quick and effortless meal to eat after a long day of travel. It’s the last errand I run before we leave town. The note is to remind myself what we can have for dinner because, believe it or not, I usually forget.*
* Funny enough, the act of writing the meals down this time (pasta for the boys, tofu and brown rice for me) reinforced the memory. I’ve been anticipating my tofu and rice all week! Lake Tahoe is fun, but not known for healthy meal options.

How do you flavor your tofu?

I saut� it in coconut oil (olive oil is fine, too) until it’s nice and golden brown. Then I sprinkle seasoning (I use herbamare) and nutritional yeast for the final minute or so. I LOVE it. I’d eat it everday if the jury wasn’t out on soy products.

No, but I used to be for years. I debate going back every now and then. Since the whole “procession o’ deaths” that was June, I’m testing the waters. I bought a fantastic book on cancer/health in Lake Tahoe, and it has me thinking.
Here, the main reason I have tofu waiting for me is convenience. Tofu stays fresh in the fridge for a while, whereas meat I would have to freeze and then defrost. Not too handy when you could potentially come home at dinner hour.
