I felt the first tickle in my throat and quickly put together a healthy lunch in hopes of warding off a cold. Too little, too late.
Better Luck Next Time Chickpeas & Rice
1 cup brown rice
1 cup fresh spinach
1 can chickpeas (or dried/soaked, you over-achiever)
seasonings to taste (I use Herbamare)
1-2 TB olive oil
vinegar (I use coconut vinegar)Cook rice using method of choice. (Today is exactly why I have Trader Joe’s Frozen microwave rice in the freezer.)
Add 1-2 tablespoons of olive oil to a saute pan on medium heat.
Rinse and drain chickpeas. Add to pan and saute until golden brown. Be careful, depending on how soft your canned beans are, they can go off like firecrackers as they cook. I have no idea what happens if you use soaked beans. Good luck.
Plate smoking hot rice and 1/2 cup* or more of the chickpeas in a bowl and toss with fresh spinach so that it wilts. Add oil, vinegar, and seasonings to taste.
* I always make the entire can of beans because Nico and I like to snack on them. You can always cook what you need and reserve the rest for another use.

Oh dear … do feel better soon! I’m trying to ward off sickness as well … my grandma’s big 80th birthday is this weekend … family will start trickling on Thursday … I can’t be sick … although, my achy skin and large bags under my eyes might say otherwise. Sigh.

i wish my kids and husband were a bit more open to trying new beans.. we live in a pinto only home for now. although, that wont stop me from making this for my own lunch. :) sounds yummy!

So inspiring! I just made it for lunch… except I improvised. Used barley for rice and white beans as chickpeas… then I added feta… SO DELICIOUS! thank you and keep up the easy, yummy recipes!
