Lunch

This post is for those people who have asked me what I eat for lunch most days.  I try to keep it as simple as possible because after making lunch for the boys, I really don’t feel like chopping or cooking.  (Remember, I eat 4 ounces of protein at every meal.)

That usually leaves me with last night’s left overs or a simple salad.  With as hot as it is starting to get, more often than not I am eating salad.  Just simple mixed greens, tomatoes, sunflower seeds, and Parmesan or goat cheese tossed with olive oil, vinegar, salt, and pepper.  For my protein I eat just under 2 ounces of Trader Joe’s Mediterranean Cheese-Style Yogurt (which is pretty much a kefir cheese) drizzled with olive oil, garlic salt, and herbs.  I like to eat the lettuce first, then take the tomatoes and use them to scoop up cheese by the teaspoonful.  I pop these in my mouth like those stuffed tomato hors d’oeuvres you get at parties–and to me they taste just as good.

I normally eat twice as much salad, to be honest.  But, it’s been desert hot this week.  I am one of those people who loses her appetite when the thermometer approaches 90 degrees, so eating hasn’t been a priority.  Now that I think of it, this quirk of mine could work in my favor if taken to the extreme.  Maybe I should move to Arizona, lose 200 pounds in the heat, and move back just in time for my high school reunion.

    Thank you for sharing this. I did not know you were dieting. I have slowly started but haven’t exactly done much yet or been too serious. I lost 3 pounds this month by walking the track for 30 minutes each night, but I certainly need to hit the a$$ blasters at the gym regularly and go for the gold.

    I’ve been having a hard time with balance lately when it comes to meals - I sort of eat a little here and there with no real sit down meals.

    How much have you lost? How much do you need to lose? I hope it’s okay to ask this… If not, tell me to mind my own business and I will. :)

    This looks soooo good! My girlfriend made a salad on Saturday and added dill and chives I swear it made it taste like a super fancy schmancy salad, I have been eating it almost every night.

    Yummy! I’m having salad for dinner now, yours just looks sooo good! Yep, it’s hot here too, and yet, I’m still BBQing a whole chicken because I don’t want to freeze it and today’s the last day to cook or freeze! I think I’ll eat some of it tomorrow cold in another salad for lunch. Mmmm, yummy again! LOL

    I live in AZ and trust me you don’t lose lots of weight in the hot weather. :) The heat means more excuses for ice cream and cool desserts. I find that I need to have some sort of bread or crackers to feel full with salad.

    Looks very yummy!! Isn’t it amazing how the simplest of ingredients can taste so good? My fav salad dressing is this: mix 1 tbs lemon juice, 1 tbs balsamic vinegar, S&P, and 1/4 cup olive oil. I use this on salad, cottage cheese, grilled vegetables, sliced tomatoes, etc.

    Oooh - another tip for goat cheese to top a grilled steak: saute up a bunch of onions & mushrooms. Then put a big spoonfull of the mixture on top of a grilled steak and top with a slice of goat cheese. The onions and mushrooms get all creamy with the goat cheese and with the steak ….. oh my it’s delicious!

    Oooh - and my favorite snack lately is cucumber sticks with hummus. Yummmy!
