My son, Gram, is 12 and has been a vegetarian since he was 5. He attributes it to Charlotte’s Web and being a friend to all nature so when you talk about Nico, I feel like they are kindred spirits. Yay! Thank you for sticking with me. :) Gram beat Nico! Nico started at age 7 and is now 13. How do you handle a vegetarian in a home of omnivores? I just bought the classic Deborah Madison cookbook to make vegetarian food more palatable for Mikey.
Oh girl. It is so hard.
We all eat pretty meat free most of the time, but I yearn for an easy chicken, veggie, potato dinner routine. He does eat some fish, which started maybe 2 years ago so technically a pescatarian. But still. So hard. Lots of tacos and beans and options where there is a bean or veggie meat protein option as well. I still look for new options all the time. I have no answers, clearly.
Twins. I have found a few tried and true that everyone will eat. Veggie sloppy joes. A veggie shepherds pie. But. Still.

brilliant! Love that zoom background. so fun for the students (and you!). you could do a whole series of libraries! takes me back to being in college and pinching myself whenever I studied at sterling memorial or the law library because it was so surreal (photos below)

Yes! Nico will eat fish. I am similarly answerless. Just know at dinner time there is another mom out there with the same struggle.
